Factores que influyen en el desperdicio de comida: un análisis empírico entre los Centennials Ecuatorianos

Resumen


El desperdicio de alimentos es un problema global significativo que afecta al medio ambiente, la economía y la sociedad, generando un uso ineficiente de recursos y contribuyendo al calentamiento global. Este fenómeno ocurre a lo largo de toda la cadena alimentaria, desde la producción hasta el consumo, y tiene impactos negativos considerables como la emisión de gases de efecto invernadero y el agravamiento de la inseguridad alimentaria. En Ecuador, se han implementado legislaciones y aplicaciones móviles para mitigar este problema. Sin embargo, la Generación Z, influenciada por estilos de vida acelerados y la sobreexposición a redes sociales, enfrenta desafíos únicos que pueden llevar al desperdicio de alimentos. Este estudio investiga cómo la preocupación por la salud y el medio ambiente, los factores que impulsan las compras y las normas personales influyen en el comportamiento de consumo de alimentos de la Generación Z en Ecuador. Se utilizó un enfoque cuantitativo se llevaron a cabo encuestas con preguntas descriptivas, que incluyó preguntas demográficas y 30 ítems evaluados en una escala de Likert de 7 puntos. La muestra incluyó a 253 personas de entre 15 y más de 30 años, utilizando un método de muestreo no probabilístico La técnica SEM-PLS fue empleada para analizar las relaciones entre las variables del estudio. Los hallazgos del estudio proporcionarán información crucial para desarrollar estrategias y programas que promuevan prácticas de consumo más sostenibles y responsables, y que ayuden a reducir el desperdicio de alimentos en la Generación Z en Ecuador.
